Kate’s Fertility Boosting Granola
I LOVE granola and until recently I’ve felt really guilty eating it as the shop bought granola is packed full of sugar. So a few months ago I decided to make my own, and it is such a success that I wanted to share the recipe with you. This granola contains natural sugars only (and then not too much) and is full of lots of fertility boosting foods.
Ingredients
- 2 tbsp coconut oil
- 125ml maple syrup
- 1 tsp vanilla extract
- 300g rolled oats
- 150g of mixed seed and nuts (whatever you have in the larder)
- 100g flaked almond (optional)
- 100g dried berries, chopped (Optional. I use dried blueberries but if you have PCOS avoid or keep to a minimum to lower sugar content)
- 50g desiccated coconut
-
Serve with full fat natural yogurt and fresh blueberries and raspberries
Method
- Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup and vanilla in a large bowl. Add in all the remaining ingredients, except the dried fruit and coconut, and mix well with a wooden spoon.
- Cover two baking sheets with greaseproof paper and divide the granola onto the two baking sheets evenly. Bake for 15 mins, until golden brown.
- Once out of the oven leave to cool. When cool, evenly add the desiccated coconut and dried berries (if using).
- Serve with lashings of yogurt and fresh berries.
- The granola can be stored in an airtight container for up to a month, but trust me - it won’t last that long as you’ll have eaten it all!
